Cooking for Engineers

Why was I not aware of this? I'm not an engineer, but I find that I'm a better cook since I started watching Alton Brown, and learning a bit about the physics and chemistry behind the cooking.

For instance, my better understanding of pie crusts has translated into remarkably flaky and tender crusts on my strawberry rhubarb pies.
